Assistant Executive Chef of Muckleshoot Indian Casino and before that he was at Daniel's Broiler, Consolidated Restaurants including 7 years of Sous Chef at the Metropolitian Grill, The Monte Carlo and Bellagio in Las Vegas; Chef Slemaker has brought a community conscious philosophy and simple Cuban-Mexican theme with family-style basics to Spitfire.  These basics incorporate fresh sustainable, local growers along with affordable dining.  Emphesis on quality, seasonality, enticing specials and high-energy dining elements are imperative.  Chef Slemaker will expand on the Spitfire mission of redefining the sports bar experience.
